Product Description
Production: Pastine di Barberino Val d’Elsa. The vineyard’s microclimate is ideal, located on a hill at 250 meters above sea level with an entirely southern exposure. Its homogeneous rows run north – south to get the most sun and the best distribution of its light. The microclimate has heavy thermal excursion between the day and the night. The terroir and the favourable exposure of the vineyards, allow the grapes to reach the perfect maturation, extremely important for premium wine.
Color: deep and intense in color
Bouquet: strong personality and scents of ripe red berries that shade into aromatic wood and spices
Taste: smooth and pleasant tannins
Alcohol level: 13.5
Matches: It is excellent with grilled and baked meat; wildfowl like partridge and woodcock; meat and dishes garnished with truffles. And also medium-aged cheeses, especially Pienza pecorino.

Additional info: Vinification:
maceration at 28-30° C for 8 to 10 days. Full malolactic fermentation.
Refinement:
in Allier barriques for 12 months, followed by a refinement period in bottles.
Advice:
this is an excellent red for aging (8 to 10 years) to be drunk in Chianti Classico glasses at 16 to 18° C.
