So, in a broader sense, the word indicates the select or choice part of total production. The outstanding personality of “Laudemio” is connected to the following producing characters distinguishing it:
- position of olive groves in peculiar areas;
- selection of olive groves on the basis of typical Tuscan varieties;

- producing control to select olive oil and gain the necessary parameters.
